Chef Mario Presents: The Art of Plant-Based Fine Dining

As part of our Weddings & Wonders – Budapest Edition event, held just ahead of Serenity Day on 6–7 May 2025, we welcomed our Austrian partners and leading figures of the Hungarian wedding industry to Budapest and the beautiful Daalarna Garden for two days of creative exchange and inspiration. The aim of the gathering was to foster dialogue among like-minded professionals, explore emerging trends, and share experiences that could spark new, visionary ideas for the future of wedding design. One of the highlights of this special edition was an exceptional plant-based dinner crafted by Chef Mario—a multi-sensory journey through seasonal flavors and sophisticated presentation.

The four-course dinner, composed of nine intricately developed dishes, reflected a growing global shift toward plant-based lifestyles, which Chef Mario sought not only to address but to celebrate. His approach was rooted in the belief that vegetarian cuisine deserves the same elegance and complexity as any traditional fine dining experience. The spring season offered a rich palette of ingredients—white strawberries, wild broccoli, green and white asparagus, fresh peas, and morel mushrooms—all used to full expressive effect in a series of courses that were as visually striking as they were flavorful.

The evening unfolded with a touch of theatrical elegance, as waiters rolled in a bread trolley offering freshly baked selections paired with three distinct house-made butters. One of these butters—shaped like a candle—lit up the table both literally and metaphorically, adding a whimsical, luxurious flourish to the first impression. This opening course set the tone for a dinner where creativity and detail took center stage

What followed was a beautifully curated trio of miniature tartlets, served individually atop sculptural totems. Each tart was a delicate composition: green asparagus paired with fresh peas for a crisp and vegetal bite; white strawberry combined with cherry tomato and a silky buffalo mozzarella bavaroise for a sweet-savoury interplay; and roasted beetroot with raspberry and Roquefort, offering an earthy richness balanced with brightness. A glass of Kreinbacher Prestige Brut provided the perfect sparkling contrast, elevating the fresh and playful flavors of the course.

The following course offered a warm, comforting contrast: a creamy white asparagus soup, delicately poured by the waitstaff and elevated by the aromatic depth of truffles. Presented in elegant Kevala white ceramics and served with Figula’s Olaszrizling–Furmint, it was a moment of calm luxury within the experience.

The main course took a bolder turn. Caramelized cauliflower purée, smoked tofu-stuffed morels, and wild broccoli were brought together by a signature teriyaki sauce and sprinkled with roasted hazelnuts. Served in black ceramic bowls, the dish embraced umami richness while keeping the spotlight firmly on vegetables. Guests were invited to scratch a special layer off their menu card to reveal the dish’s title—an engaging twist that added surprise and delight. The Etyeki Kúria Pinot Noir Selection 2020 paired seamlessly with the depth of flavor on the plate.

Dessert closed the dinner with playful elegance. A quartet of mini sweets—mango-passion fruit, strawberry, raspberry opéra, and “Barangoló,” a forest-inspired chocolate treat—were served on sticks from a floral arrangement, blurring the line between course and décor. A glass of Holdvölgy Tokaji Zéta Szamorodni 2017 added a golden finish to the meal.

To conclude, guests were invited to the bar for after-dinner drinks and a selection of handcrafted chocolates, rounding off an evening that was not only a celebration of culinary creativity but a shared experience of beauty, craftsmanship, and community.

The feedback from guests was nothing short of inspiring. Many expressed how the menu challenged and redefined their perception of plant-based cuisine. Through imagination, precision, and a deep respect for ingredients, Chef Mario demonstrated that vegetables, when given the spotlight, can tell stories just as rich and captivating as any traditional fare. This dinner wasn’t merely a highlight of the event—it was a testament to the power of creativity and collaboration that defined the entire Weddings & Wonders experience.
