This philosophy guided us during one of our recent wedding celebrations, where the entire dinner was curated as a fine dining journey of artful pairings. It became a perfect example of how food and wine can speak the same elegant language.

Elegance in Every Glass
The evening began with LAMY PILLOT Chassagne Montrachet Blanc 2023 , a refined Burgundy Chardonnay known for its citrus, white peach, and toasted almond notes. Its delicate minerality and bright acidity beautifully complemented the tomato and strawberry salad with buffalo mozzarella bavarois , creating a dialogue between fruit, creaminess, and subtle oak.

For the second course, grilled monkfish with peas, edamame, mushrooms, and green curry sauce was paired with LAMY PILLOT Chassagne Montrachet Blanc Pot Bois 2023. This wine’s ripe orchard fruit and creamy texture mirrored the richness of the dish while its gentle minerality refreshed the palate, balancing depth with elegance.
As the evening progressed, the menu evolved toward bolder flavours. The main course of grilled US Prime beef tenderloin with truffled mashed potato, confit potato cubes, chestnuts, and Madeira truffle jus was paired with LAMY PILLOT Chassagne Montrachet Rouge 1er Cru Morgeot. This Pinot Noir, with its aromas of red cherry, wild berries, and spice, offered refined depth and a silky structure that harmonised with the dish’s intensity.

To conclude the dinner, Oremus 6 Puttonyos Tokaji Aszú 2016 accompanied the Mango and Ginger Delight, a dessert of Tahitian vanilla mousse, candied ginger, mango glaze, and raspberry textures. The wine’s layers of apricot, honey, and candied orange peel echoed the tropical sweetness and warmth of the dessert, ending the evening on a note of balance and light.
